Shrimp farms require vast amounts of acreage for ideal growing environments. A typical shrimp farm is hours, if not up to a day, away from the processing facilities.
Preserving ultimate freshness is key in the OISHII program, so we made large land commitments to put farms within minutes, not hours or days, of our production plants.
These large land consolidations of plants and farms dedicated to OISHII shrimp took over a decade worth of planning and construction.
Farm to FactoryLive Shrimp Transportation
To eliminate water absorption and to maintain the highest standard of quality, Oishii shrimp are transported live to the factory in aerated barrels. This method of care is more similar to cattle, pork and chicken industries, where the animal arrives live until it is humanely euthanized.

The moment Oishii transportation arrives to the factory, Oishii Shrimp go through a cycle of water baths that thoroughly rinse and clean the shrimp. Water temperature is close to 0 °C, which immediately euthanizes the shrimp.
This processing time from live to humanely euthanized is incredibly short for the seafood industry. When typical times range from hours to days, this shortened timeline ensures that firmness, texture, and low levels of drip loss that Oishii Shrimp are known for.
